Preservation methods like salting and smoking arose from man’s need to preserve meat for long periods of time. These techniques that have resisted the test of time remain in the traditions of the people of the Trás-os-Montes region and are now part of the rich cultural and gastronomic heritage of this region. Thus, in the Sausage Party, Quinta das Covas proposes to provide visitors with an opportunity to taste a range of delicious sausages from the “Alheira” sausage to the “Butelo”, the “Azedo” (Sour) to the “Salpicão”... All these products have a common denominator, the quality and unique flavour of sausages produced by Bísaro – Salsicharia Tradicional (Bísaro - Traditional Sausage Maker).

During this experience we would like visitors to make use of all their senses, therefore in addition to the tasting, exhibition and sale of sausages, there is also an opportunity to learn the preparation methods and techniques of the best smoked sausages that the region of Trás-os-Montes has to offer.
